How to make chicken and mushroom soup:

  • Take a large saucepan and place over low medium flame. Heat the butter and olive oil, after that add onion and stir for 5min.
  • After that add the chicken, carrot, celery. cook, stirring until the chicken is nearly cooked through. 
  • Add the mushrooms and continue cooking, stirring, until mushrooms are tender. 
  • And add the garlic and green onions and cook for 2 minutes longer.
  • Stir in flour until blended; add chicken broth and thyme.
  • Cover the pan and reduce the heat to low; cook for about 10 to 15minutes, or until the vegetables are tender.
  •  Add salt and pepper to taste; stir in cream and heat through.

  • 12 ounces Fresh mushroom sliced or chopped
  • 1/2 cup carrot peeled & sliced thin
  • 2 cloves garlic minced
  • 2 tbsp Butter
  • 1 pound chicken breast boneless & fine sliced
  • 1 tbsp olive oil extra virgin
  • 1 large rib celery diced
  • 4 green onion sliced
  • 2 spoon all purpose flour
  • 4 cups chicken broth unsalted or low sodium
  • 1/2 tbsp thyme dried leaf
  • 3/4 cup heavy cream
  • 4 cups water
  • salt & papper to taste
